Scientific process of preparing Yogurt:

Below the procedure of manufacturing yogurt is given-

  • Milk is heated to 85°C to denature the milk proteins and prevent curd formation.
  • After heating, the milk is left to rest and thereby cool down to around 45°C.
  • The bacterial culture containing Lactobacillus delbrueckii subsp. Bulgaricus and Streptococcus thermophiles are mixed in.
  • After the addition of ‘yogurt culture,’ the temperature of 45°C is maintained for four to twelve hours to allow the process of fermentation.
